For the feijoada, you will need:
Black beans (approximately 500g)
Varied meats: dried beef, pork ribs, Calabrian sausage and paio sausage
Seasoning: garlic, onion, bay leaf, salt and pepper
Tip: Remember to desalt the dried meat before preparing by soaking it and changing the water a few times.
How to prepare
- Cooking the beans: In a large saucepan, cook the beans with a few bay leaves until tender.
- Preparing the meats: Boil the desalted meats (dried meat, ribs, sausages and paio) separately to remove excess fat. Then add them to the cooked beans.
- Sautéing the spices: In a frying pan, sauté garlic and onion in olive oil until golden and add to the beans and meat. Leave to cook over a low heat so that the flavors blend.
- Finish: Adjust the salt and pepper to taste and cook until the broth is thick and the meat is tender.
